If there’s one food you absolutely have to try on your trip to our sleepy corner of Mexico it’s the local Pollo Asado grilled over open coals, streetside in neighboring Zacualpan. And if there’s a second, it’s fresh, juicy mangoes, straight from the trees behind the estuary. We’ve put both ingredients together here to create the ultimate in harmonious food bliss: Grilled Mango, Chicken Quesadillas, possibly the best thing you can eat in Mexico, period.
For our recipe we use the above mentioned spatch-cooked pollo asado from the street vendor in Zacualpan. To try at home, use your favorite roasted or rotissarie chicken recipe.

- Flour Tortillas
- 2 Cups Grilled Chicken, chopped
- 1 Cup Cheese (shredded)
- 1 Small bunch Cilantro
- 1 Lime
- 1 Mango (halved and peeled)

Grill Mangoes over direct heat. Place cheese, chopped chicken and diced mango on open-faced tortilla away from direct flame. As cheese melts move tortilla over flames for 10 – 15 seconds to toast (be careful not to burn). Season with juice from lime wedge
Remove from grill, fold in half, cut into wedges, garnish with cilantro, lime wedges and sour cream. Enjoy!
